Roulade of Dover sole:  winter ratatouille and sun dried tomato emulsion

Grilled filet of sole:  shiitake mushrooms, black truffle vinaigrette

Braid of Arctic char and Dover sole:  creamed spinach, heirloom carrots and béarnaise sauce

Crème Caramel:  toasted coconut, tropical fruit
